Kamphaeng Phet Preserves Traditional Shan Pork Dish
In Kamphaeng Phet, a traditional Shan dish known as Mujao Kha Tang is being safeguarded by local expert Benjawan Jiiamtom. The dish, made from minced pork, fermented rice and coconut milk, is served over crispy rice crackers and is increasingly rare. Her efforts aim to preserve this culinary heritage for future generations.
The dish is prepared by mixing minced pork, garlic, fermented rice, and salt, then letting it marinate for about twenty minutes. Coconut cream is heated in a pan, the marinated pork is added and stir‑fried with palm sugar, onions, tomatoes, chilies and spring onions until fragrant. It is served over crispy fried rice crackers, accompanied by fresh vegetables, delivering a savory, crunchy and creamy taste. Benjawan says keeping the recipe alive honors ancestral wisdom and ensures future generations can taste this valuable heritage. She hopes the effort will prevent the dish from disappearing amid modern food trends.
