Miang leaves include not just lotus petals but also peppery leaves and Hong Kong Chinese kale, selected one leaf at a time, taking only young, edible leaves.
Chilies, ginger, lemongrass, lime, and various fresh vegetables are sourced directly from a pesticide-free agricultural garden at Khao Khapong in Phetchaburi Province, owned by Dr. Aswin Ingkakul, chairman of the Miracle hotel group, who invested in growing vegetables himself to ensure customers only get the best.
