Kanchanaburi Wins Five-Star Prize at Thai Food Good Health Competition

Kanchanaburi's Srichaiyo Pura health town team, represented by the Krang Khrua kitchen, claimed the five-star savory dish award with their Kaeng Kae Pla Kang menu at the Thai Food Good Health competition held on 13 September 2025 at Suan Dusit University's Suphan Buri campus. Health Minister Pattana Prom-Pattana opened the event to drive the policy "Thai Food Good Health: Elevating Thai wisdom to international health food standards," launching in Health Zone 5 before rolling out to achieve the target of 77 provinces and 770 menus under one unified Thai Food Good Health standard.
The competition featured chefs from eight provinces in Health Zone 5—Suphan Buri, Ratchaburi, Kanchanaburi, Nakhon Pathom, Samut Sakhon, Samut Songkhram, Phetchaburi, and Prachuap Khiri Khan—competing in three categories: savory dishes, sweets, and beverages.
The Kaeng Kae Pla Kang dish, developed by Chef Kaeng's kitchen team, drew inspiration from a local ingredient challenge and reinterpreted northern Thai folk culinary wisdom by using the structure of kaeng kae, a traditional curry featuring diverse vegetables, herbs, and spices. The dish elevates pla kang as the primary protein while vegetables, herbs, and spices provide natural aroma, flavor, color, and texture. The preparation emphasizes real ingredients, reduces reliance on salt, and avoids flavor-enhancing powders.
The core philosophy behind the menu is: "We do not create deliciousness by adding more seasoning, but by adding more diversity of nature." The Kaeng Kae Pla Kang represents a reinterpretation of northern Thai culinary wisdom in a contemporary health-conscious context, prioritizing taste while delivering nutritional value through careful ingredient selection and preparation.
The initiative aims to identify and develop 10 signature local menus per province—770 menus across all 77 provinces—and establish pathways to elevate quality from three-star to four-star "Taste Excellence" and five-star "Global Wellness Menu" standards, preparing these dishes for the wellness and international markets. Health Zone 5 was selected as the pilot area, with the Bureau of Thai Traditional Medicine and Alternative Medicine partnering with Suan Dusit University to test the Thai Food Good Health criteria on 80 herbal health menus before nationwide expansion.
