The western-central Thailand food entrepreneur network, representing eight provinces, joined forces with food and tourism bodies to organize the 'Flavor Imagination Delicious Dish' fair on October 16–18, 2026 at the front of Market Village in Hua Hin, Prachuap Khiri Khan. The fair seeks to upgrade street food and local Thai dishes, create added value from regional ingredients and culinary identity, and connect tourism with community economies. Dr. Sirikan Noratim, president of the eight-province vendor network and head of the Prachuap Khiri Khan Thai Food Vendors Association, together with Ajarn Arun Koetsawat, network founder, Nopphon Nucharoen, advisor to the Cha-am Hua Hin Chefs Club, Somchai Krasojeim, president of the Prachuap Khiri Khan Tourism Industry Council, and Kittipong Siriphetkasem, president of the Hua Hin-Cha-am Tourism Business Association, presented approaches to drive the local food and tourism industries. Dr. Sirikan said the event opens space for regional food entrepreneurs to demonstrate their potential, apply creativity, innovation, and local ingredients to develop high-value menus, while also serving as a forum for knowledge exchange, raising service standards, and linking food businesses with tourism. The 'Flavor' segment will gather renowned restaurants, legendary eateries, award‑winning establishments from various provinces, and leading hotels in the Hua Hin‑Cha‑am area to showcase their menus and service styles at over 40 booths. Ajarn Arun noted that the eight‑province network aims to connect operators across provinces through knowledge sharing, capacity building, and business matchmaking, leveraging each area’s distinctive ingredients and food culture to create joint economic opportunities and strengthen entrepreneurs and communities. Nopphon Nucharoen said the Cha-am Hua Hin Chefs Club will support standards and creativity by applying local ingredients with modern cooking techniques while preserving traditional flavors and emphasizing food safety to offer consumers new experiences. Somchai Krasojeim highlighted that food is now a key component of tourism, especially gastronomy tourism, which can turn local specialties such as Pattaweia pineapple, coconut, jackfruit, and fresh seafood into stories that add value, connect food operators with tourism businesses, and distribute income locally. Kittipong Siriphetkasem added that the food fair will boost activities and incentivize tourists to visit Hua Hin and Cha‑am, potentially lengthening their stay, benefiting related businesses such as hotels, accommodations, restaurants, tour vehicles, and souvenir shops. Ultimately, the 'Flavor Imagination Delicious Dish' festival serves as an important link that unites the economies of the eight western‑central provinces.
